Zobo is a popular Nigerian drink mostly common in the northern and western parts of the country. This drink has a high nutritional value and very cheap to afford and hence the reason for its high demand. Zobo is gradually having more preference for carbonated drinks such as; cola, Fanta, sprite, Pepsi and many others.
Most people call it hibiscus tea as it is produced from the hibiscus flower (Hibiscus sabdariffa). This bright red color drink has a sour-sweet taste with a refreshing feeling when served cool with snacks.
How to prepare zobo drink
Materials Needed
- 1 big bowl of zobo leaves (Hibiscus sabdariffa)
- 1 big piece of ginger
- 1 big ripe pineapple fruit
- pineapple extract ( flavor)
- sugar
- water
Procedure for preparation
- Wash the dry zobo leaves repeatedly in cold water, zobo leaves are usually very dusty so make sure you wash it properly. It will seem like all the flavored color is washed out but don’t worry, the dry zobo leaves still have a lot of color intact when you start boiling.
- Wash, peel and cut the pineapple into the thin slices, the back of the pineapple can also be added when washed properly.
- Peel and cut the ginger into tiny pieces
- Put the washed zobo leaves into a deep pot
- Add the pineapple and pour enough water to cover the contents of the pot
- Start cooking at medium to high heat and let it boil for 10 minutes
- Add the ginger and more water and keep boiling for about 30 minutes. This is the time, it will take for the zobo leaves to be completely soft and the pineapple tender.
- Turn off the heat and set the zobo aside to cool down completely
- When cool, wring out the juice from the pineapple and zobo leaves leaving only the zobo juice in the pot.
- Pour the juice through a sieve to take out the remaining large particles then pour it through a chiffon cloth or a small sieve to remove the tiniest particles
- Add the pineapple extract at this time and stir
- Pour into bottles or plastic cans and refrigerate
